Three long hours later, we were finally set free from the tedious safety video. Thankfully, Janie – or maybe just Shauna – had though to provide us some refreshments, a table full of what we were told was yesterday’s leftovers from the shop.

There was tea, coffee and all sorts of cakes and patisserie items, all of which were no longer fresh but were far from stale. It was clear that Janie had a high standard for the items they sold in the shop and I was glad to sample it.

From handmade almond croissants to mini goat’s cheese quiches, we piled up our plates and drained the coffee pot before being ushered through to the kitchens by Shauna.

The staff were gone, after what I presumed was an even earlier morning than we had been given, and there was a man waiting for us, arms crossed impatiently as we filed in.

As his eyes moved from each of us in turn, I realised that I had seen him before.

He was the man from the pub yesterday, the man who had called me a tourist in a tone that would have offended even someone with the thickest skin.

I tried not to let my face show that I remembered him, as he looked blankly back at the three of us. Perhaps he had been having a bad day.

“I’ll be leaving you in the capable hands of Marco,” Shauna explained. “He will give you your itinerary for the rest of the course and teach you some of the basics today.”

“Thank you, Shauna,” Marco said as thanklessly as if she had slapped him in the face. The coldness between them was obvious as she turned and walked back down the corridor. He addressed us simply, “Welcome. Today, I will be putting your basic knowledge to the test. The results will tell me how much you need to improve to be able to pass this course. Firstly, you will have one hour to make a Victoria Sponge cake. Then we will break for lunch. After lunch, you will have an hour to make a shortcrust pastry. You will then have another hour to use your pastry to create a quiche. At the end of the day, you will be graded on these items. If you do not meet the standards of this establishment, you will repeat the test tomorrow and the day after until you do. We will do everything we can to assure that you don’t fail, and you have each been chosen for this coveted scholarship because of your purported skill as bakers.”

The tasks were simple, and yet the way he laid them out made me feel as if I was back in secondary school, struggling to get through my French oral exam. Perhaps it was just his accent that was giving me flashbacks, or perhaps it was the cold, emotionless stare.

Penny was frantically taking notes, but she paused to raise her hand.

“Yes?” Marco asked impatiently.

“Will we be expected to make the jam and buttercream from scratch for the Victoria Sponge, sir?” She asked.
